| Methi Chaman ... 1 INGREDIENTS * Spinach 250 g * Fenugreek leaves 125 g * Oil 4 tbsp * Cottage cheese(cut into cubes) 200 g * Pottatoes(cut into fingers) 150 g * Yoghurt(blended with water) 1 cup * Salt to taste * Turmeric powder 1 tsp * Coriander powder 1 tsp * Red chilli powder 1/2 tsp * Garam masala powder 1 tsp 2 COOKING DIRECTIONS 1. Grind the spinach & the fenugreek leaves in a blender to make a paste. 2. Heat the oil in a pan, fry the cottage cheese cubes, and the potato fingers, till they are golden brown, remove with a slotted spoon, and reserve. 3. In the same oil add the ground greens, and stir fry them till the oil comes to the surface. 4. Add half the buttermilk, along with the salt, and the turmeric, coriander & red chilli powders. 5. Add the potatoes & cottage cheese, and simmer on low heat till the potatoes are cooked. 6. Add the rest of the butter milk, and garam masala powder. 7. Continue cooking, till the oil comes to the surface again. 8. Serve with boiled rice.
