| Recipe # 2 .................... ...................Chicken Chow Mein ![]() Ingredients: 1 lb (500 g) flour noodles 10 1/2 oz (300 g) boneless chicken breast, skinned 1 egg white 2 1/2 tbsp cornstarch (corn flour) dissolved in 1 1/4 tbsp water 13 tbsp (200 ml) vegetable oil (or lard) 7 oz (200 g) chives, washed well and cut into 1 inch (3 cm) sections 1 tbsp salt, or to taste 1 cup (200 ml) chicken broth 1/4 tsp MSG (optional) Directions: 1. Shred the chicken breasts. Mix the egg white and the cornstarch-water into a paste and coat the chicken shreds. 2. Heat 4 1/2 tbsp (100 ml) of the oil in a wok to about 212oF(100oC). Add the chicken shreds and cool, stirring, until they turn white. Pour out the oil and set it aside. Mix the chives, MSG, salt, and stock with the chicken and bring to a boil. Drain off and reserve the broth and seasonings. Place the chicken shreds in a bowl. 3. Boil the noodles 3 times, as described in recipes 165 and 166. After the final boiling rinse in cold water and drain well. 4. Heat 4 1/2 tbsp (100 ml) of the oil, including that used earlier, in the wok until the oil surface ripples. Tilt the wok to swirl the oil around. Add the noodles in an even layer. Shallow-fry them, swirling the wok so they cook evenly. Fry until browned on one side, then slide the wok scoop or a spatula under the noodles and turn them over. Sprinkle the other 4 tbsp of oil around the edges and shallow-fry the noodles until browned on the other side. Add the reserved chicken broth. Cover the wok and simmer for 1 minute, or until the noodles absorb the sauce. toss the noodles with chopsticks or a fork and add the chicken shreds. Stir, remove, and serve. .................... .................... ....... Recipe # 3 Chicken Shashlik INGREDIENTS br /> 2 lbs boneless chicken 2 tsp Salt 1 tsp chili powder 2 Green Bell peppers 3 Medium Onions 6 Small green chilies 1 lbs canned whole/diced tomatoes 1/2 Cup Ketchup 3 tbs Soy Sauce 3 tbs Oil INSTRUCTIONS:- Cut the chicken into cubes and fry it in oil on low-medium heat until the chicken is white. (15 minutes) Dice the tomatoes if you're using whole ones. Add this to the chicken. Deseed the bell peppers and cut them into 1 inch chunks. Cut the onions into chunks and add these in as well. Throw in the rest of the ingredients and cook this on low-medium heat for about half an hour or until the bell peppers are slightly soft. Serve with boiled rice &enjoy it Recipe # 4 sweetSourchicken ![]() Ingredients 1 onion ¼ cucumber ½ red pepper, seeded ½ green pepper, seeded 1 sliced pineapple, fresh or canned 75ml (5 tsp) pineapple juice 60ml (4 tsp) vinegar 15ml (1 tsp) sugar ½ tomato peeled, seeded and chopped into 4 pieces 300ml (½ pint) chicken stock 30ml (2 tsp) oil 450g (1 lb) chicken, cut into small sized cubes 2.5ml or ½ tsp of red food colouring 1 clove garlic, chopped 5ml or 1 tsp of corn flour, combined with a little water 5ml (1 tsp) Salt and freshly ground black pepper, to taste 100g or 4 oz of Self raising flour 225ml or ½ pint of water 225ml or ½ pint of vegetable cooking oil Cooking Instructions Cut the onion, cucumber, red and green peppers and pineapple into thin matchsticks. To make the sweet and sour sauce in the wok, mix together the pineapple juice, vinegar, sugar, tomato, chicken stock and food colouring. Heat for approximately 10 minutes, then add the corn flour and lastly mix in the onions, cucumber, red and green peppr. Set aside and reheat when required. Add salt and pepper ... to taste. Place cubes of chicken in a small bowl and mix in salt, pepper and corn flour ... allow to marinate until required. To make the batter, mix the flour and water in a small bowl until it forms a paste like batter. Stir in the cubes of chicken and place in wok with cooking oil, make sure that the oil is hot. Cook until the batter is golden brown. Once cooked place chicken on a plate and pour on the sweet and sour sauce. Serve with stir fried rice or boiled rice. .................... ......... Recipe # 5 Chicken in Hot Garlic Sauce Ingredients Boneless Chicken (cut into cubes) 1/2 kilogram Green Chillies (cut into square cubes) 8 count Onions spring (chopped finely) 1 count Capsicum chopped finely 1 count Corn flour 1/2 cup Chinese Soya Sauce 2 tablespoon Chilli Garlic Sauce 6 tablespoon Chicken cubes 3 count Oil for frying as per taste Salt 1/2 tablespoon Chinese Salt 1/2 teaspoon Garlic Powder paste 1/2 tablespoon Black Pepper Powder 1/2 teaspoon Method Cover the chicken with corn flour and fry on low heat until golden brown. Fry capsicum, spring onions and green chillies. Add all the remaining ingredients with 1 cup of water except corn flour and bring to boil. Dissolve the corn flour in 1 ½ cup of water and pour the solution in the pan. Add the chicken and cook till the sauce thickens. Serve with Chinese fried rice .................... ............ Recipe # 6 Sweet 'n Sour Chicken Ingredients: 1 pound boneless chicken -- cut in cubes 2 tablespoons oil 1 clove garlic -- minced 1 Cup -- green pepper strips 1 cup carrot strips 1 1/4 cups chicken bouillon 1/4 cup soy sauce -- or teriyaki sauce 3 tablespoons vinegar 3 tablespoons brown sugar 1/2 teaspoon ginger 1 can chuck pineapple in juice -- (8 oz.) 1 1/2 cups Minute Rice Cooking Directions: Brown chicken in oil. Add garlic, green pepper and carrots; saute briefly. Add bouillon, soy sauce, vinegar, sugar, ginger and pineapple with juice. Bring to a full boil. Stir in rice. Cover, remove from heat and let stand 5 minutes. Stir before serving.
