| Directions For the pizza dough: 250 grams (9 oz.) plain flour (maida) 10 grams (1/3 oz.) fresh yeast or 1 teaspoon dry yeast 2 teaspoons oil 1/2 teaspoon sugar 1/2 teaspoon salt For the filling: 1 packet (200 grams) fresh mushrooms or 2 teacups cooked corn 1 chopped onion 1 chopped capsicum 1 tablespoon oil 1 teaspoon lemon juice 2 chopped green chillies salt to taste For the pizza sauce: 500 grams (1 1/8 lb.) red tomatoes 1 onion, chopped 3 cloves garlic, crushed 1/2 teaspoon chilli powder 1 teaspoon sugar (approx.) 2 tablespoons oil salt to taste. For the baking: 1 teacup white sauce Recipe available in our Cook Book) 5 to 6 tablespoons grated cheese For the pizza dough: 1. Sieve the flour with the sugar and salt. 2. Add the oil and mix well. 3. Make a well in the centre. Crumble the yeast and put in this well. 4. Sprinkle 1/2 teacup of warm water over the yeast. Wait for 5 minutes. 5. Mix the yeast with the flour. Add enough water to make a semi-soft dough. 6. Knead the dough for 5 to 7 minutes.7. Cover the dough with a wet cloth and leave for 45 minutes or until double in size. 7. Cover the dough with a wet cloth and leave for 45 minutes or until double in size. 8. Knead the dough for 1 minute. For the filling: 1. Heat the oil and fry the onion for 1 minute. 2. Add the capsicums and green chillies and fry again for 1 minute. 3. Chop the mushrooms. 4. Add the chopped mushrooms, lemon juice and salt and cook for 3 minutes. 5. Drain. For the pizza sauce: 1. Chop the tomatoes. Drain the liquid. 2. Heat the oil and fry the onion and garlic for 1 to 2 minutes. 3. Add the chopped tomatoes, chilli powder, sugar and salt and boil until the tomatoes are soft. 4. Blend in a liquidiser. How to proceed: 1. Roll out the dough into thin puris to fit a muffin tray. 2. Grease a muffin tray thoroughly and press the puris inside. 3. After 10 minutes, spread a little filiing, plenty of pizza sauce and little white sauce on each round. 4. Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) for 10 to 12 minutes. 5. Serve hot. Tips: Instead of the above pizza dough, you can straightaway use readymade pizza bread
