| Ankaboot k liye chocolate brownies ![]() Ingredients : 100g dark chocolate (at least 60% cocoa solids) 100g walnuts (optional) 110g butter 225g sugar 2 large eggs, beaten 50g flour 1 tsp salt 1/2 tsp baking powder (or use self-raising flour) Makes 15 brownies Recipe : 1. Pre-heat oven to 180°C (Gas 4), chop nuts roughly and break chocolate into small squares. 2. Melt butter and chocolate together over a low heat. 3. Mix melted butter and sugar in a bowl. 4. Beat eggs then add to mixture. 5. Mix flour with salt and baking powder, then add. 6. Stir mixture thoroughly. 7. Put mixture into a greased baking tray. 8. Bake for 30 minutes, check frequently so as not to over cook. The middle should be sticky, while the outside remains crisp. 10. Leave to cool, dust with icing sugar and cut into squares. Advice : Brownies can also be served warm with vanilla ice cream, or eaten cold.

| Aik Lamha k liye Black Forest Coffee Cake ![]() Ingredients: 3 eggs 1 1/2 cups sugar 1/2 cup liquid shortening 1 1/2 cups milk 2 tbls vanilla 3 cups flour 2 tsps baking powder 1 cup chocolate chips 1 can cherry pie filling Beat eggs, add sugar, shortening, milk & vanilla. Then add flour & baking powder. When well mixed add chocolate chips. Pour into a large greased baking pan. Drop cherry pie fill by the tsp. in even rows into the batter. Topping: 1 cup Bisquick 1/2 cup sugar 1/4 cup butter or oleo 1/2 cup chocolate chips for garnish Blend with a pastry blender to form loose crumbs. Sprinkle over top of cake and garnish with chocolate chips. Bake at 375° for 50 min. to 1 hour until golden brown.

| Gajer ka Halwa Whispi bhai k liay Ingredients: Grated carrot 1 kg Milk 1 litre Whole dried milk (mawa) 200 grams Sugar 2 cups Ghee 2 tbsp. Dry fruits (sliced almond and cashew nuts, raisin ) 1/2 cup Cardamom powder 1/2 tsp. Method: 1. Put milk and grated carrots in a heavy base kadhai / deep saucepan and bring it to boil. Cook over medium heat until all the milk gets dried up. You should stir the mixture occasionally to prevent any sticking. 2. Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes. 3. Add ghee and mawa. Stir well and fry on low heat until ghee starts separating. 4. Decorate with remaining dry fruits and serve hot. (Optional- decorate with silver leaf) 5. Add lemon juice and paneer pieces. Mix well so that all the paneer pieces gets properly coated with sugar. Allow it to cool.

| Kashmiri Chai Pehli Barish k liay ![]() 1. Pour water in a heavy based large pan. Add tea leaves,salt, seeds of green cardamom and bicarbonate of soda. 2. Bring to boil reduce heat and simmer briskly for 45 minutes or until it reduces to 1\3 its quantity. 3. While it is still boiling pour in it about 2-3 cups of cold water or enough water to make four cups in all. Bring to boil and simmer for 4-5 minutes. Remove from heat, strain and keep aside. 4. Boil the milk with ground cardamom over low heat. Pour prepared tea water (Qahwa) in the milk. Bring to boil, add salt and simmer for 3-5 minutes over low heat. Remove from heat and pour into 6 cups.Pour 1 tablespoon of cream or malai. Sprinkle 1 teaspoon of pistachio over it. Flavor of the tea depends on the quality of the green tea leaves.
