Chicken | | | |
| Ingredients:
2 C yogurt
¼ C mustard
5 t Salt
1 T dry mustard powder
1 t Hot pepper
1 t black pepper
1 whole chicken (app.1-1½ kilos)
3 C all purpose flour
1 T baking soda
1 T ground garlic
Oil for frying Directions:- Mix the yogurt, mustard and approximately 2 t salt, 1 t of the dry mustard powder and ½ t of the hot pepper.
- Rinse the chicken very well, cut into 8 pieces and put the chicken into the yogurt mixture. Place in the refrigerator for 1-3 hours until well marinated.
- Mix the flour, baking powder, garlic and the remaining salt, pepper, mustard powder and hot pepper.
Taking one piece of the chicken at a time coat with the flour mixture making sure each piece is throughly coated. Leaving the chicken pieces in the flour mixture, Set aside for about 1 hour. - Heat the frying oil until hot. Shake the excess flour mixture from the chicken pieces and fry each piece 8 minutes on each side or until cooked.
- After frying place on a paper towel to soak up the excess oil.
- Serve hot with mashed potatoes, and corn and carrot salad.

• Wash the chicken well.
• Cut the wings.
• Cut the chicken in eight pieces.
• Season the chicken with yogurt and marinate in the refrigerator for a whole day at least.
• Mix salt with flour.
• Cover chicken with flour on both sides, and place on a colander to dust excess flour.
• Fry in deep oil over a heat of 160 to 170 centigrade. P.S. In order to get hot spicy chicken, marinate it with chili powder, water and oil. | |

Skinned boneless chicken breasts
Olive oil
Chopped onion
Brown sugar
Fresh tomato juice
Tomato sauce
Chopped dry mint
Mustard Direction
• Heat little oil in a pan over medium fire. Fry chopped onion and then add brown sugar. Mix well and add tomato juice, tomato sauce, dry mint and mustard. Toss well and leave to simmer on a low heat until it boils. Set aside to cool.
• Brush a tray with oil and place chicken breasts side by side and cover with the ready tomato sauce.
• Place the tray in oven of 180 degrees until the chicken breasts are well cooked. The upper flame of the oven can be switched on in the last five minutes.
• Cut the chicken in slices and serve, either hot or cold. |
